Alternative proteins are being re-scored in 2026, and the scorecard looks a lot less like “can it mimic meat?” and a lot more like “can it ship at price, with a label consumers trust?” A March 9 report from Science|Business, published with support from EIT Food, describes the sector as moving from niche adoption to mass-market integration, with key hurdles including taste, price, and health perception.

For operators, this is procurement news. Once a category moves from “innovation” to “repeat purchase,” specifications harden. Ingredient declarations get audited. Claims get vetted. And production economics stop being a PowerPoint problem and become a plant problem.

The new spec is about processing, not just protein source

Science|Business reports that first-generation plant-based products proved the market could be built, but the next phase is a refinement cycle. It highlights pressure to address mouthfeel and savory notes, the stigma around ultra-processed foods, and the need to improve environmental and resource efficiency while staying affordable.

A 2025 review in Food Bioscience, available via ScienceDirect, puts a sharper edge on the “health perception” issue: it notes that plant-based proteins can depend on ultra-processed ingredients and can have incomplete amino acid profiles. That matters for manufacturers that have been treating “plant-based” as a proxy for “better-for-you.” In practice, it pushes product and quality teams toward measurable nutrition and functionality targets, for example protein quality, amino acid completeness, sodium, and fat profile, rather than a single-source label.

Fermentation and cultured products still carry evidence gaps buyers have to manage

Science|Business points to more efficient production methods, including precision fermentation, as part of the path away from mimicry and heavy processing. But the evidence burden rises as ingredients get newer and supply chains get more specialized.

Nature’s review of alternative protein categories notes that the environmental benefits of plant- and insect-based proteins have been documented, while the impacts of microbe-derived proteins and cultured meat have not been fully assessed. Nature also flags incomplete safety assessments and unclear regulatory guidelines as friction that can slow the category’s progress. For enterprise buyers, that translates into a practical requirement: supplier-provided lifecycle analysis and safety documentation must be category-specific, and “sustainable by default” is no longer a safe assumption for internal reporting.

ScienceDirect’s Food Bioscience review adds that cultured meat has made progress in areas like scaffold engineering and serum-free culture media, but still faces scalability challenges and underexplored long-term health implications. Even when a company can clear pilot runs, those open questions affect how retailers and foodservice operators set launch geographies, labeling language, and post-market monitoring requirements.

What changes in formulation, QA, and supplier qualification

Frontiers’ 2025 review on alternative proteins lays out a familiar list of blockers, high production costs, regulatory hurdles, and market acceptance, and it points to processing routes such as wet and dry fractionation, enzymatic hydrolysis, fermentation, and cell culture as the workhorses that determine scalability. That’s a reminder that the “ingredient” a buyer contracts for is often a process outcome, and process variability shows up later as batch-to-batch texture, hydration, and yield issues on the line.

The operational shift is toward tighter supplier qualification and more explicit product definitions: what processing aids are allowed, what allergens and cross-contact risks are acceptable, and what sensory and nutrition thresholds must be met after cooking and holding. Science|Business’ framing of a move toward quality-focused maturity suggests the companies that win shelf space will be the ones that can deliver repeatable specs at scale, not just compelling prototypes.
