Sweetgreen is putting a price tag, and a production number, on what restaurant automation is supposed to do. Its Infinite Kitchen model can assemble salads and bowls at up to 500 per hour and is about 50% faster than human assembly, according to Foodservice Equipment and Supplies. The company pegs the system cost at $450,000 to $550,000 per unit and says it expects at least seven points of margin improvement from the model.
That is the kind of concrete math operators can actually take into a capex meeting. It also frames what is changing in foodservice automation: the conversation is drifting away from “robots in the dining room” and toward connected equipment that squeezes minutes and mistakes out of a constrained footprint.
Sweetgreen and Kernel are testing two very different automation playbooks
Foodservice Equipment and Supplies reported that Sweetgreen debuted Infinite Kitchen last year and has opened two of the automated formats so far, one in Illinois and one in California. The system uses temperature-controlled chutes and a conveyor to dispense prepped ingredients into bowls, with orders placed and customized digitally.
In Sweetgreen’s fourth quarter 2023 earnings commentary, CEO Jonathan Neman linked the system to higher throughput, better order accuracy and portioning consistency, and lower team member turnover, Foodservice Equipment and Supplies reported. He also said average ticket at both locations was more than 10% higher than their respective markets. Sweetgreen told Foodservice Equipment and Supplies that seven of roughly 25 new units it expected to open in 2024 would likely feature the model, with additional renovations planned for three to four large urban stores.

Kernel, the new concept from Chipotle founder Steve Ells, is running a different experiment: shrink the box, centralize prep, and use automation to keep the on-site team tiny. Foodservice Equipment and Supplies reported Kernel’s first location opened in February 2024 in an 800-square-foot New York City space, designed to run with an average of three employees per shift because prep happens in a nearby central kitchen and the store focuses on finishing and handoff.
Kernel’s handoff is a workflow, not a counter line. According to Foodservice Equipment and Supplies, customers order online, receive a pickup time accurate to the minute, get a text or email when the order is ready, then use a mobile app to open a secure cubby. Kernel said most guests are in and out in under a minute.
The KI Awards signal a shift from single-task robots to full workflows
Foodservice Equipment and Supplies reported that the Kitchen Innovations Awards program marked its 20th anniversary in 2024 and that 25 products earned recognition. The publication also reported that those products would be displayed at the National Restaurant Association Show in Chicago, May 18, 21, 2024. According to Brian Ward, president of Target Market & Media Services and administrator of the KI Awards program, “this year, we saw articulated robotics performing significantly more complicated motion and tasks” and an expansion of tasks.
Brian Ward, administrator of the KI program, told Foodservice Equipment and Supplies that labor cost and availability were the biggest pain points and that AI and recognition technology are showing up as training shortcuts. His example was direct: if an oven recognizes what’s inside, it can select the right program without an employee choosing a setting.
Judges said the step-change in 2024 is that vendors are now tying the components into one whole. Ward told Foodservice Equipment and Supplies that a robotic fryer shown last year has since been developed into a unit that also seasons fries and packs them for service or for holding. He also cited a newer robotic pizza system that can be arranged in a straight line or in clustered setups and can integrate with kitchen display systems as well as point-of-sale and third-party delivery platforms.
KI judge Richard Eisenbarth of Cini-Little drew a timeline operators will recognize: eight years ago, KI trends were hardware-focused, like multideck cooking platforms and touchscreens, and “technology to really reduce labor was nonexistent,” Foodservice Equipment and Supplies reported. Eisenbarth said only last year did the first touchless salad bar, untended robotic coffee kiosk and a kitchen management system appear, and that in 2024 sensors, movement monitors, kitchen management software and AI are being embraced more broadly.
Robots are also a customer expectation, which changes how you design the front end
Automation’s hardest sell is often the guest experience: will customers accept a different flow, and will they trust it? QSR Magazine reported on a Y-Pulse “Dream Kitchen” survey run through the whyville.net online community that asked school-aged students what next-generation school foodservice should look like. Many responses centered on robots cooking faster, automatic portioning, and ordering without waiting in line, according to QSR Magazine.
For operators, the near-term implication is not that a K-12 cafeteria will suddenly buy robotic arms. It’s that the next generation increasingly expects personalization and speed to be delivered by machines: automatic portioning, recognition of preferences, and a continuously moving line. That lines up with what Sweetgreen and Kernel are already doing at the ordering and handoff layer, where digital ordering, time slots, and automated pickup can reduce labor friction without putting a humanoid in the lobby.
The first automation win is often not a robot, it’s a handoff process that eliminates the line.
