On this episode of Unwrapped: A Foodservice Podcast, brought to you by SandenVendo, host Daniel Litwin talked with Mike Weisser, President & CEO, Joey Lavook, VP of Sales & Marketing and Brad Hutchison, Senior Business Development Manager.

This episode was unique as things returned to relative normality for the Nightclub & Bar Show 2021 in Las Vegas. The group discussed the show, how it kicks off a “what’s next” for the industry at-large, and how SandenVendo is innovating for the future of nightlife operations.

One of the industries hit hardest by COVID, nightclubs and bars are geared up for a summer of high demand, new consumer and industry standards, and digging out of a financial hole.

SandenVendo was on the floor with the rest of those in the industry. This event is huge symbolically for the industry, but also served as a leaping point into the post-COVID future. According to Weisser, the show expected over 40,000 attendees, and it’s almost like it’s kicking off the recovery of the bar industry.

“This particular convention is critically important to the industry,” Lavook said. “First of all, we haven’t had any conferences or big meetings for the last year. Second, this is the show to show all the innovation and technology that’s going into restaurants and nightclubs. It’s really the who’s who in the industry.”

SandenVendo is working on some innovative technologies at the moment, including a partnership with Nordic Beer Systems Inc. to add a beer dispensing tower system to your product portfolio.

GLP-1 shoppers push frozen meal tray choices to the start of development

GLP-1 shoppers push frozen meal tray choices to the start of development

GLP-1 users want smaller, protein-dense frozen meals, and that demand is pushing frozen processors and tray suppliers to make packaging decisions earlier. The tray is becoming part of the recipe. Speed to market increasingly depends on whether a tray runs on existing sealing lines and holds up from freezer to microwave.

  • 01In a portion-controlled frozen entrée, tray choice belongs in the same development meeting as the recipe, because a tray that needs retooling or warps on reheat delays the SKU.

Rice startup NIVERA says its edible coating nearly triples produce shelf life

Rice startup NIVERA says its edible coating nearly triples produce shelf life

NIVERA, a startup that grew out of doctoral research at Rice University, has developed a thin, edible coating that nearly triples produce shelf life in its own testing. It is starting with avocados and berries. Daniel Preston's mechanical engineering lab at Rice contributed expertise in spray-coating applications and in translating laboratory discoveries into practical technologies.

  • 01NIVERA's edible coating nearly tripled shelf life for certain fruits and vegetables in the company's own testing, and avocados and berries are first in line.
  • 02Earlier Rice research produced an egg-based coating that doubled the shelf life of avocados and bananas. NIVERA, a startup built on Rice doctoral work, says its coating of proteins and fibers can nearly triple the shelf life of certain produce, based on the company's own testing.
  • 03The useful question for a shipper or retailer is how many extra days the coating adds under that buyer’s own temperatures, packaging and transit times, because Rice News did not describe the startup test conditions.

Diners cite inconvenience before price when cutting chain visits, William Blair finds

Diners cite inconvenience before price when cutting chain visits, William Blair finds

In William Blair's 16th quarterly restaurant survey, "inconvenient" was the top reason diners gave for visiting a chain less, ahead of "too expensive." Monthly restaurant interactions fell to 13.6. Takeout ordering moved back to phone and counter, at 40 percent versus 34 percent for apps. Operators may want to test fewer ordering steps.

  • 01Convenience is the top reason diners order takeout or delivery (65 percent), and inconvenience is the top reason they visit a chain less—suggesting the same factor may cut both ways.
  • 02For takeout, phone and in-person ordering (40 percent) now beats restaurant apps and websites (34 percent), and among guests under 60 the split is 36 to 33.
  • 03A useful benchmark for off-premises leaders: surveyed diners average 13.6 restaurant interactions a month, roughly 70 percent of them off the dining room floor.
